Corn Casserole

This recipe always goes over very good at Thanksgiving and Christmas. A friend shared this recipe with me and we have had it every year since. It is very easy to make i hope you enjoy.

The ingredients are as follows:

2 eggs

1/2 cup Jiffy Cornbread Mix

1/2 cup oil

1 can whole kernel corn ( drained )

1 can of cream corn

1/4 tsp baking soda

8 ounces green chili peppers ( chopped )

8 ounces sour cream

1 1/2 cup grated cheddar cheese ( i use the mild cheddar )

3/4 tsp garlic salt

Preheat your oven to 350 degrees

Mix all your ingredients together in a casserole dish. Make sure you get a dish that has a little room in it because this dish will expand as it bakes. Bake for 45 minutes or until golden brown. If it isn’t as golden brown as you would like just let it cook a little longer keeping a close eye on it. Take it out and serve.

It is a very easy recipe and taste delicious. I had a bunch over for dinner and made it one night and everyone loved it. If you are planning it for a big get together 10 people or more i would suggest doubling the recipe. I have learned if you do double it and cook it all in one dish you will need to cook it longer and also check on it more often to make sure it doesn’t expand over the sides of your dish. If you are not a big fan of the chili’s then i suggest only using 4 ounces on the original recipe or 8 ounces if you double it.

Creamy Burrito Casserole

If i ever run across a good recipe you know i have to share it. Here at my house we get tired of eating the same things every week so every now and then i get brave and decide to try something new. Yesterday on facebook someone posted this recipe and i decided to try it. I was a little nervous because my family can be picky but this recipe is so easy to do and it is so delicious so i am sharing it with all of you and i hope you enjoy.

The ingredients you will need are as follows:

1 lb ground beef or ground turkey

1/2 medium onion ( i used onion flakes)

1 ( 1 1/4 ounce) package taco seasoning

6 large flour tortillas

1 (16 ounce) can refried beans

2 – 3 cups shredded taco cheese or cheddar cheese (whichever you prefer)

1 (10 3/4 ounce) can of cream of mushroom soup

4 ounces sour cream

jarred hot sauce if desired to spice it up ( i just used salsa)



Brown ground beef / turkey and onion, drain add taco seasoning and stir in refried beans.

Mix soup and sour cream in a separate bowl. Spread 1/2 the sour cream mixture in the bottom of a casserole dish. Tear up 3 tortillas shells and spread over sour cream mixture, put 1/2 the meat bean mixture over that, add a layer of shredded cheese, then repeat the layers one more time. Put in the oven and bake uncovered at 350 degrees for 30 minutes.


I doubled the recipe and it fit in a 9 X 13 casserole dish. That will make 2 meals for us and there are 4 adults in my house so it does make a lot. Like i said before my family can be real picky when it comes to trying new things but they really loved this one. I also loved it because it was so easy to do. Pizza Rollers

Last night my daughter decided she wanted to cook supper for us. Anytime someone is willing  to cook i am not going to stop them that is for sure. She entered the room i was in and said i need some stuff from the store i am cooking so i sent her off with her dad and she came back with the ingredients for these pizza rollers. We had had something similar one night at a local pizza place and then she found the recipe online which she changed up some to (as she calls it ) make it her own. Here is what she did it was very quick and easy.

Ingredients you will need:

Large canned biscuits

Mozzarella cheese shredded


Preheat the oven according to what temperature is on the can of biscuits

You can add whatever ingredients you want but these were the ones she used. She took the large biscuits and cut them in half then she smashed them and put the cheese and pepperoni inside then folded it over and pinched the sides so the ingredients stayed inside while they cooked. She did this until all the biscuits were used.  She placed them in a slightly greased glass dish or you can use a cookie sheet. Then she baked them until the biscuit was golden brown. Then take them out and serve them as is or with pizza sauce (we used garlic and herb spaghetti sauce) These were delicious and the best part is it is quick and easy and there is not much of a mess to clean up after.

This is a great recipe for after school snack or if you want to eat them as a meal like we did. This is such an easy recipe the kids can even help let them create their own with whatever ingredients they want.

Oreo Balls

Alright everyone even though we don’t want to admit it the holidays are just around the corner. This is one of my daughters favorite recipes to make for Christmas. Very simple to make and absolutely delicious.

Ingredients you will need:

8 oz Philly Cream Cheese softened

1 pk Oreo cookies crushed ( i usually put them in my mixer to get them crushed really fine )

1 pack white chocolate bark


Mix the 8 ounces of softened Philly cream cheese and crushed oreos in a bowl until it forms a ball and all dry pieces of cookies are mixed in. Put the mixture in the freezer for about 10 to 15 minutes to let the mixture harden just slightly.

Remove them from the freezer after the time is up and start breaking off pieces and rolling it into little balls and place on wax paper. Once you get all the mixture rolled up into little balls put them back in the freezer for about 30 to 45 minutes.

About 15 minutes before time to take the oreo balls out of the freezer heat the stove on low and slowly melt the white chocolate bark. Once the white chocolate bark is melted take the oreo balls out of the freezer and start dipping them one by one into the melted chocolate bark i have found it is easiest if you use a toothpick and stick it in the oreo ball to dip. Once the oreo ball is completely covered then put it back on the wax paper. Once all of them have been dipped in the chocolate and back on the wax paper put them in the refrigerator until the chocolate hardens. Once the chocolate has hardened then you can eat. I promise you will not be disappointed these are delicious.

You can also do these with the nutter butter cookies. If you use the nutter butter cookies you will need to add a 1/2 cup of peanut butter to the mixture and you will need to use the chocolate almond bark instead of the white chocolate. Both are good and it makes good gifts if you are making a candy basket for someone for Christmas.

Sausage Crousants

This one is a favorite of my family and it goes a long way. I hope everyone enjoys it as much as we do. The first time i ever tried this one of my friends made it for a breakfast we had at work and i knew when i tried it that my family would love it and i love how easy it is to make.

Ingredients you will need:

2 pounds mild sausage

2 cups shredded cheddar cheese (sharp)

16 oz cream cheese ( softened )

2 cans Jumbo crescent rolls

1 to 2 teaspoons of dry ranch dressing mix

Preheat oven to 350 degrees


Brown sausage and drain.

Mix drained sausage with the cream cheese, cheddar cheese, and ranch dressing powder.

Spray 9 X 13 glass dish or non stick pan with cooking spray ( lightly ). Place 1 can of jumbo crescent rolls in the bottom of greased 9 X 13 dish or pan. Press the seams together so there are no holes for the mixture to seep through. Place sausage mixture on top of crescent rolls and spread evenly. Then take the second can of crescent rolls and spread them across the top, pressing the seams together. Bake according to the instructions on the back of the crescent rolls can or until golden brown. Check before taking out of oven to make sure it isn’t still doughy where it is on top of the sausage mixture. Sometimes if it cooks to fast it will not get done good enough near sausage mix.

You can serve this alone or serve with eggs or whatever else you eat with breakfast.

If you would rather fix this recipe for lunch or supper  you can use hamburger meat instead of the sausage. Makes a great meal and is very easy to make. If made for supper serve it up with potatoes or other vegetables.

Granny’s Hot Dog Stew

I was just sitting thinking of my sweet granny and how much i miss her when i ran across one of her recipes that my family absolutely loves. I remember when i was a kid granny making us hot dog stew. We always were excited when we knew she was making it. I hope if you try this recipe you enjoy it as much as we do.


2 or 3 large potatoes ( cut in chunks)

1 large onion chopped

1 green pepper chopped ( optional )

1 can Italian diced tomatoes

1 can tomato sauce

1 can green beans

8 large hot dogs sliced in chunks


In a pot saute onions and green peppers in a little oil. Add diced tomatoes and tomato sauce with water. Simmer 10 minutes. Add potatoes, when they are done add the hot dogs and the green beans. If needed add a little more water to cover all ingredients in pot. Simmer until everything is cooked. If your stew is not thick enough you can add ketchup to thicken up.

I will add that to me this stew is better the longer it sits. It is delicious the first night but there is something about how much better it is once it has sat in the refrigerator over night.

My granny use to also serve the stew with bread and butter. She would usually go get some kind of bread (whatever kind you prefer) from the bakery and it is so good when you add the butter then dip it in the stew juice.

If you do not like hot dogs you can also use polish sausage or a Portuguese sausage called linguica. We love it either way. I hope if anyone tries this recipe that they enjoy it. It is very good on those cold winter nights.

Sun-Drop cake recipe

My daughter has inspired me to start a blog on some of my favorite recipes. She and her friend make the best Sun-Drop cake this weekend and i thought this just cannot be kept to myself.  I do have to say though that the cake did not last long around my house. In fact i was probably lucky to even get a bite of it. Besides it being delicious it is also very easy to make. So if anyone else would like to try it here is the recipe below:

Ingredients for the cake are as follows:

1 box lemon cake mix

1 small pack of instant lemon pudding mix

1 – 12 oz can of Sun-drop (save 2 oz of this for the glaze)

3 eggs

3/4 cup of oil

Ingredients for the Glaze are as follows:

1 cup powered sugar

2 tbsp water

1 tsp vanilla

2 oz of Sun-drop (The 2 oz you saved above)

Pre-heat the oven to 350.

Take all the ingredients for the cake and mix together (do not follow the instructions on your cake box) until there aren’t any lumps.

Pour the mixture evenly into your well greased cake pan ( i recommend a bundt pan )

Put it in the oven and let back 28 to 30 minutes or until you can put a fork in the cake and it comes out clean.

When cake is done take it out of oven and let it sit and cool. While the cake is cooling you can go ahead and start mixing your glaze. Mix the glaze so that there are not any lumps in it and all the sugar is dissolved.

When your cake has cooled enough so that it won’t stick to the pan when you take it out then you can pour the glaze all over it.

I promise you won’t be disappointed it is delicious. Every year for my husbands birthday this is what he wants instead of a traditional birthday cake.
