This recipe always goes over very good at Thanksgiving and Christmas. A friend shared this recipe with me and we have had it every year since. It is very easy to make i hope you enjoy.
The ingredients are as follows:
2 eggs
1/2 cup Jiffy Cornbread Mix
1/2 cup oil
1 can whole kernel corn ( drained )
1 can of cream corn
1/4 tsp baking soda
8 ounces green chili peppers ( chopped )
8 ounces sour cream
1 1/2 cup grated cheddar cheese ( i use the mild cheddar )
3/4 tsp garlic salt
Preheat your oven to 350 degrees
Mix all your ingredients together in a casserole dish. Make sure you get a dish that has a little room in it because this dish will expand as it bakes. Bake for 45 minutes or until golden brown. If it isn’t as golden brown as you would like just let it cook a little longer keeping a close eye on it. Take it out and serve.
It is a very easy recipe and taste delicious. I had a bunch over for dinner and made it one night and everyone loved it. If you are planning it for a big get together 10 people or more i would suggest doubling the recipe. I have learned if you do double it and cook it all in one dish you will need to cook it longer and also check on it more often to make sure it doesn’t expand over the sides of your dish. If you are not a big fan of the chili’s then i suggest only using 4 ounces on the original recipe or 8 ounces if you double it.
