Peanut Butter Cookies for your Sweet Tooth

Rule of the Thumb – Refrain from eating too much sweets

The title of my blog post is kinda catchy J Well this one applies to me – someone with a sweet tooth. 

I love cookies just like my kids so I made some peanut butter cookies for them few days ago.

This is what I did:

I cream one cup of peanut butter which is something I bought from my neighbor which was made locally and I’m happy because the peanut taste is strong which makes me think that it’s made with pure peanuts unlike those peanut butter you could buy from groceries.

I cream it together with one cup of softened butter, half cup of sugar and half cup of honey which is a good alternate for sugar.  I believe it’s a healthier alternative for sugar – however I would like my kids to love this sweet treat so I have added some of it.

On a mixing bowl, I combined it with an egg, followed by a cup of sifted all-purpose flour, a pinch of salt, ¾ teaspoon of baking powder, and ½ teaspoon of baking soda.

I have added some amount of all-purpose flour until a nice dough was made.  Some people are putting it on the refrigerator but in my case – I didn’t.

I roll the dough into smaller balls and put on a tray with baking sheet.  Each ball was flatten with a fork for a better looking cookie which creates crisscross pattern.

Cookies are baked in preheated oven which is set at 200 degrees Celsius for about ten minutes until cookies turned brown. 

You could really smell the peanuty flavor from the oven.  Such aroma is good for someone who loves to bake.  Baking is a hobby that I wanna explore more.

Some of those are topped with chocolate tiny pieces.  Some are also sprinkling it with peanuts, cashew nuts or almonds.

I woke up around six in the morning yesterday.  What to buy in the market is what I am thinking about.  So I went ahead and went there and bought few items for our breakfast, lunch, snack and dinner.  I bought half kilograms of beef meat for caldereta, some fruits like ripe mangoes and bananas.

Our dinner is Beef Caldereta.

What I did is I used the pressure cooker as the beef tenderizer since I have small amount of time to cook for our lunch.  Because if I will not use it – tenderizing the beef may take more than two hours which would consume a lot of gas.

Using a large mixing bowl, I put on ¼ cup of soy sauce together with calamansi juice from five pieces of calamansi to serve as a marinating liquid for the beef.

So I went ahead, took out the tendered beef from the pressure cooker, put it on the marinating liquid and set it aside for thirty minutes.  The remaining liquid on the pressure cooker was set aside for future use.

  • Another way of marinating the beef is to marinate it with soy sauce, calamansi juice and four pieces or more of crushed onions and left it for overnight. On this method – using the pressure cooker as beef tenderizer is not applicable.

I crushed five cloves of garlic, saute’ it together with sliced two pieces of onions, and sliced red bell pepper.

Fry three pieces of sliced potatoes and two pieces of carrots.

Afterwards, put on the marinated beef and liquid then simmer it for about fifteen minutes.

Put five tablespoons of tomato sauce and coconut milk followed by the fried potatoes and carrots on the caldereta.  Using clean scissors, I cut on four pieces of small chili peppers (“siling labuyo”) for this hot meal.  Two pieces of laurel leaves was added for fragrance.

A spicy caldereta rather than the opposite is more appealing for me.  Hence my kids does not like a spicy meal unlike their father.  There should be a balance between spiciness, sweet and sour taste on this meal.

You could also put some grated cheese and liver spread on this meal for a better tasting caldereta.

A Meaty Spaghetti for Her

For Spaghetti Meatballs:

Two tablespoons of olive oil

four cloves of garlic – minced finely

four tablespoons of tomato sauce

one teaspoon of ground black pepper

1/4 kilograms of ground pork

two cups of bread crumbs

1/4 cup of cold butter

Half teaspoon of iodized salt

Half teaspoon of black pepper

Half teaspoon of dried basil leaves

One piece of red bell pepper – cut into small pieces

two eggs

For Spaghetti Sauce:

Two pieces of onions – chopped finely

Four cloves of garlic – minced finely

Two pieces of red bell pepper – cut into small pieces

Two tablespoons of black pepper

Two tablespoons of salt

One Pack of Spaghetti Sauce

1 can of corned beef

1 can of vienna sausage

Ten pieces of fried hotdogs – cut into small pieces

1 can of all purpose cream

Last 17th of January is my mother’s birthday.  We celebrated it simply by preparing meatballs spaghetti, sandwich, pineapple juice and cake.

For the meatballs:  all the ingredients are mixed on the mixing bowl.  I rolled it into small balls and set the oven at 200 degrees Celsius.  I waited for thirty minutes and the meatballs are done.

So I cooked 1 kilograms of spaghetti pasta – put small amount of salt and vegetable oil.  I removed the water and then set it aside.

I saute the following:  garlic, onions, and bell pepper. 

I add the fried hotdogs, sliced vienna sausages, corned beef and meatballs.

Since I have meatballs – I no longer add additional meat onto the spaghetti sauce.  I also run out of budget during that time and this is budget – wise.

I poured on the tomato sauce followed by the all-purpose cream which makes it taste better.

Additional grated cheese on top of the spaghetti tastes great too 🙂

My mother was happy on her special day.  It really feels good when someone appreciates your hard work.  I really love spaghetti even when I was a little kid.

I’m just a typical mother who is fond of doing experiments in the kitchen to satisfy the cravings of my kids and husband.

Today I made a home-made hopia munggo.  Hopia is popularized by Chinese immigrants in the Philippines.

For the filling – this is what I did:

I soaked a pack of yellow mung beans in the water for overnight.  On the next day I heat it up on a boiling water to soften the beans to create a paste.  I add half cup of condensed milk onto the mashed mung beans to create a yummy filling.

For the first dough I used a cup of all purpose flour and combined it with 1/3 cup of vegetable oil.

Since I used a third class flour – my dough is not that smooth – it’s kinda crumbly.

For the second dough I used two cups of all-purpose flour and mixed it with three tablespoons of sugar, half cup of water and half cup of vegetable oil.

I rolled the first dough, flatten it with my hands on a baking tray making sure that it’s thin enough to fill the entire tray.

Then I knead the second though and cover it on the first dough.

Afterwards, I put the sweetened mung filling onto the top of the flattened dough making sure that it’s spread entirely on top of it.  Using a spatula – I covered it with the other half of the dough.

It’s better to put it inside the freezer for it to chill and remove the excess oil with a clean towel.  But I’m in a hurry so I was not able to do this part.

I glazed it’s top with one piece of egg.

I preheated the oven at 200 degrees Celsius and put the tray inside it.  I waited for thirty minutes.

This is our breakfast for today.  This is a good snack too.


A Yummy Beefy Empanada

I’m glad that I was able to create an empanada few days ago.

For the crust:

Three cups of flour

1 piece of raw egg

1/2 cup of cold butter – I used dairy cream brand

six tablespoons of cold water

half teaspoon of baking powder

half teaspoon of salt

For the filling:

quarter kilograms of ground beef

one onion

three cloves of garlic

a teaspoon of salt

a teaspoon of basil leaves

a teaspoon of black pepper

one piece of carrot – cut into small pieces

three pieces of potatoes – cut into small pieces

a cup of green peas

four teaspoons of sugar

Cooking Method:

  1. Saute’ garlic and onion with small amount of cooking oil which is hot enough followed by the ground beef.  Wait until the beef’s color turns brown probably around five minutes.
  2. Cook the green peas, carrots and potatoes.  Sprinkle small amount of salt and pepper.
  3. Mix it with a tablespoons of sugar depending on your desired taste.
  4. Set it aside

Cooking Method for the crust:

  1. Combine the dry ingredients such as  flour, four tablespoons of sugar, baking powder, salt in the mixing bowl.  You could use a wire whisk to combine the ingredients but in my case I prefer using my own hands.
  2. Cut the butter into smaller pieces and put it on the mixing bowl.  
  3. Put small amount of water until the dough is fully formed.
  4. Divide the dough into smaller pieces forming it into spherical shape. You could use a rolling pin in this case. 
  5. Put two tablespoons of the filling onto the flattened dough.  Seal the dough and press the edges using a fork.  
  6. Preheat the oven at 400 degrees Fahrenheit or 200 degrees Celsius. 
  7. Glaze the crust with raw egg.  Prepare the baking tray top with wax paper so that the dough will not stick on the tray.
  8. Bake the dough for twenty minutes or more.

My Choco Banana Cake

“My sweet tooth is always longing for sweet treats”

Yesterday, I have decided to prepare a banana cake but I ended up creating this chocolate banana cake 🙂

Things that I prepared:

One whole butter (melted)

Three cups of all-purpose flour

Two teaspoons of baking powder

Two teaspoons of baking soda

One and half cup of brown sugar

Four pieces of eggs

Four Pieces of Ripe Saba Banana (if Lakatan type of banana is not around) – mashed

One can of evaporated milk (much better if you’ll use one cup of Fresh milk)

3/4 cup of cocoa powder and a cup of boiling water

A cup of raisins

Set the oven at one hundred eighty degrees celsius.

So I put the dry ingredients first on the mixing bowl such as the following:  flour, baking soda and baking powder.  On a separate bowl I mixed the melted butter with sugar making sure that it’s well incorporated.  While mixing it, I have added the eggs one by one until all of it is well blended.  On a separate cup I mixed the boiling water with cocoa powder and poured the mixture on the liquid mix.

I mixed the liquid mixture with the dry ingredients making sure that it’s well blended followed by the mashed ripe bananas and raisins.

I put some oil on the trays so that the banana cake will not stick on it’s surface once done.

I poured the mixture on the trays and put it inside the oven.  I have waited for forty five minutes to an hour and prepared this mouth-watering chocolate banana cake for my little ones.

I did this around five o’clock in the morning and put on the table around six in the morning for our breakfast. 

It really feels good when someone appreciates your hard work but I forgot that my husband doesn’t like raisins so better remove it on my next banana cake 🙂


First Chocolate Cake for My Two Year Old

October 11, 2015 – my son is already two years old.  I made a cake for him.  This is the first time I made a cake and I find it difficult to design it so I just spread the frosting all over the top.

For the chocolate cake:

I used ¾ cup of Goya Cocoa Powder since Hershey’s is not available in the market.  Using the mixing bow, I mixed the dry ingredients such as the following:

Two cups of white sugar

1 ¾ cup of all-purpose flour

1 ½ teaspoon of baking soda

1 ½ teaspoon of baking powder

1 teaspoon of salt

Then I sift the dry ingredients onto another bowl.

On another bowl, I poured a cup of fresh milk, 1/3 cup of vegetable oil, and two large eggs.  I also add two teaspoons of vanilla flavor on it.  Based on the Youtube video I followed – do not mix it yet.

I used a wire whisk then carefully poured the wet ingredients onto the dry ingredients while mixing it slowly.  I have added a cup of boiling water onto the mixture and the chocolatey smell of the cocoa powder is really yummy.

I set the oven to 180 degrees Celsius and bake the cake for forty five minutes.

For the frosting, this is what I did:

I melted two packs of unsweetened chocolate and mixed it with one whole of unsalted butter.  I added 2/3 cups of shortening, Nestle all purpose cream, and half cup of confectionary sugar on it.

I think the cake that I made tastes good but it doesn’t look great J

I hope that my son would like it.  I also prepared spaghetti for his birthday.  It’s just a simple celebration being shared with some of our neighbors, family and friends.  I do not have enough budget to buy him balloons and expensive toys.  I can’t believe that my son is two years old.

I told my husband to buy two little candles for this small cake but he was not able to find one.

My husband and I love to eat pizza.

We are used to eat one slice of pizza while inside the supermarket after buying certain stuffs for our house.

We are fond of buying pizza from Pizza Hut and Greenwich.

After having our own oven, I have decided to create my own pizza and the great way to learn this is by

watching certain videos from YouTube.


For the Pizza Crust:


1 cup of warm water (110 degrees Fahrenheit) to activate the active dry yeast

2 teaspoons of active dry yeast

1 teaspoon of sugar

3 cups of sifted all-purpose flour

2 teaspoons of salt

1 teaspoon of olive oil

1. Put the sugar on the warm water followed by the active dry yeast.

* Make sure that the water is not too hot for it may kill the yeast.  Your dough will not rise if this will happen.

2. Mix it and set it aside until it becomes foamy.

3. Using a wooden spoon, put two cups of all-purpose flour on your mixing bowl followed by the salt and mix it well.

4. Make a hole on the middle then put some of the foamy liquid (activated yeast) and mix it well.

5. Put the remaining flour and mix it.  Using your mixer, mix it until it forms a smooth dough.  What I used is

the hand mixer.  Kept on mixing the dough until it’s smooth.

6. Get a bowl, put some olive oil so that the dough will not stick then cover it with cling film.

Let the dough rest for an hour.

7. Preheat your oven – 230 degrees Celsius

For the Toppings:

1.  Took the dough and kneed it.  At this point, I did not use a rolling pin, using my

hands, I formed a big circle which fit on the pizza tray.  Put some olive oil on top of it.

2. Put the sauce on it followed by the toppings.

3. What I put on it are bell peppers, onions, and chorizo.  We also include the all-time favorite which is Mozzarella Cheese.  Some are putting mushrooms and pineapples on top of their pizza.  I do love our home-made pizza.

4. Then put it on the oven.  Wait for 15 to twenty minutes.
