So, I’ve mentioned before that I like to cook and make new recipes. Lately, I have been trying to budget pretty hardcore, so we aren’t buying a whole lot of snacking food. So I’ve had to kind of create different meals to keep me from getting hungry during the day.
I don’t know about you, but I love ramen. It’s one of the best inventions ever. I know it’s not all that great for you, but it is awesome to have when you’re low on cash and hungry for some asian food. But the other day, I was just tired of having it in soup form. I decided to create something new that I would really like.
Maybe it’s weird, but I love peanuts with asian noodles. I am always putting them on top of stir fry and lo mein noodles. Yum!
Anyway, I created this new sweet peanut noodle dish.
I take an oriental flavored package, fill a bowl with water, toss the noodles in, and put it in the microwave. After the noodles are mostly cooked, I add the flavor packet and about two tablespoons of peanut butter to the bowl. I microwave it for another minute or so.
When the noodles are nice and soft, I drain the water out of it. Then, I add about three tablespoons of the Panda Express brand of mandarin sauce. I’m sure any kind of teriyaki sauce would substitute well, though. I mix the noodles around, and I top it with some actual peanut pieces (I had some whole peanuts that I shelled and smashed).
It is actually really good. I like the sweet sauce mixed with the saltiness of the peanuts, and it’s nice to have a little crunch among what are normally just all soft noodles.
I actually had that for dinner tonight because my hubby got home late, and we didn’t have much time to cook dinner.
So am I crazy? Am I the only one that does weird meals with ramen? Surely not…
