Gingerbread Waffles with Spiced Brown Sugar Syrup


Gingerbread WafflesGingerbread is such a delicious flavor!  That is why gingerbread cookies are so popular, not only for the holidays as gingerbread men and houses, but also in gingersnaps all year round.  This is why I decided that I wanted to make some gingerbread waffles.  So what I did was to take my grandma’s homemade waffle recipe and played with it a bit to add some gingerbread spice.  I think it’s really delicious, especially paired with my family’s Spiced Brown Sugar Syrup!



  • 1 cup molasses
  • 1/3 cup butter
  • 2 teaspoons baking soda
  • 1/2 cup buttermilk
  • 1 beaten egg
  • 2 cups flour
  • 2 teaspoons ginger
  • 1/2 teaspoon salt



  1. In a medium saucepan, place butter and molasses and bring to a boil
  2. Turn off heat and add baking soda, milk and egg, stirring to combine
  3. In a mixing bowl, mix flour, salt, and ginger
  4. Combine dry and wet mixtures into batter
  5. Cook in a preheated waffle iron


Spiced Brown Sugar Syrup




  1. Dissolve brown sugar in water stirring constantly
  2. Bring to a boil and add cinnamon and cloves
  3. Reduce heat to low and simmer for 10 to 15 minute until thickened
  4. Remove pan from heat and let cool to room temperature
  5. Strain syrup through cheesecloth or fine metal strainer into a jar
  6. Throw away the cinnamon and cloves
  7. Keep refrigerated, should last for a week to 10 days


These waffles and with this syrup is a dynamite combination, very flavorful, but as an added pop of flavor, sometimes I make some simple candied pecans to sprinkle on top, which my husband just loves!  They are easy to make, you just toss a cup of salted pecans in a saucepan with a couple tablespoons of butter and a couple tablespoons of brown sugar and just stir over medium heat until they are caramelized, then cool.  I put them in a bowl on the table, I have no idea how long they last in storage because my husband eats them all the same day I make them.  🙂
