Custard Ice Cream with Maple Pecan Topping

Custard Ice Cream~


Custard ice cream is like vanilla, but it is more thick and creamy.  It is delicious all by itself, but it totally shines when paired with an incredible topping like maple pecan.  These two things are perfect together, the flavors play off each other and just create a party in your mouth!


Custard Ice Cream

Tools Needed:  Ice cream freezer


  • 4 eggs
  • 1 1/2 cup of sugar
  • 1/4 teaspoon salt
  • 4 cups milk
  • 3 cups evaporated milk
  • 2 teaspoons vanilla



  1. With an electric mixer, beat eggs for 2 minutes
  2. Add sugar and salt
  3. Add milk and beat till combined (do not over beat)
  4. Place in sauce pan over low heat and keep stirring until the mixture thickens
  5. Remove from the stove and chill in the refrigerator
  6. Remove from refrigerator when the mixture is cold through and add evaporated milk and vanilla and stir till well mixed
  7. Pour into a one gallon ice cream freezer and freeze


Maple Pecan Topping




  1. Place butter in a sauce pan and melt over low heat
  2. Add sugar, water and corn syrup
  3. Boil to 230 degrees
  4. Remove from heat and slowly add cream while stirring
  5. Add maple flavoring and nuts and stir till combined


I prefer to serve this topping while it is still warm, but not hot, because it melts the ice cream.  I let it cool for 5 or 10 minutes before using it.  It can be used cold, but it is a bit more difficult to pour.


One time I was making this topping and when I went to pour the maple flavoring into the measuring spoon, the bottle was empty.  I was horrified!  I had no time to go to the store, and my neighbor is a total non-baker, so I knew she would not have any to borrow.  I was getting ready to panic when I thought of using maple syrup!  I started out with a quarter cup, and ended up adding a bit more to make the flavor strong enough.  It kind of changed the consistency of the topping, but it was still delicious.  So if you find yourself without any maple flavoring, feel free to use my hack!
