Ginger Peach Bread Pudding

GP Bread Pudding`
This is a delicious fall dish that is perfect for breakfast or brunch, or really a snack any time. It’s super easy to make, and it can be made and cooked in under an hour. Try this on your family this weekend!
  • 1 28 ounce can of sliced peaches, packed in juice
  • 1 tablespoon cornstarch
  • 8 slices of whole grain bread, cubed
  • 1 3/4 cup 2% milk
  • 1/3 cup of apple juice concentrate
  • 3/4 cup raisins
  • 1 teaspoon of vanilla
  • 1/2 teaspoon ginger
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/8 teaspoon salt



  1. Preheat oven to 350 degrees
  2. Grease a 8 x 8 glass pan
  3. Drain the liquid from the peaches and put in a bowl.
  4. Add cornstarch and stir until smooth
  5. Add bread cubes, milk, apple juice concentrate raisins, ginger, vanilla, cinnamon, nutmeg and salt
  6. Mix well, but gently
  7. Chop the peaches small and stir them into the mixture
  8. Spread the mixture into the greased, glass pan
  9. Bake for approximately 35 minutes


Serve hot or cooled, great with ice cream, whipped cream or peach glaze.  If you don’t have a recipe for peach glaze, here’s mine:

Peach Glaze


  • Two cups of chopped up very ripe peaches
  • 1 cup sugar
  • 1/2 cup water
  • 1 tablespoon real butter
  • pinch of cinnamon



  1. Place peaches in a blender or food processor and puree
  2. Place peaches, water and sugar in a saucepan over medium heat
  3. When mixture boils, reduce heat and simmer for 10 minutes
  4. Turn off the burner and add butter and a pinch of cinnamon, mixing until the butter is completely melted
  5. Let cool for 10 minutes
  6. Dribble the glaze over the the bread pudding sparingly.  Do not use too much or your bread pudding will be soggy.


I hope you enjoy this recipe, it is a favorite with both kids and adults in my family!  Perfect as an after school snack or packed in a school lunch, it is just as delicious served with coffee for dessert or when friends come over.  It is really a versatile dish.  Enjoy!

      I definitely agree, I love to make it in different flavors, like caramel apple, or choclate! Ain’t no bread going to waste in our house!
