Kiss Cookies

Kiss cookies are my favorite Christmas cookies. My sister is a primo baker and during the holidays she goes completely crazy. She makes thumbprint cookies, snowball cookies, toll house cookies, chocolate snappers, coconut cookies, peanut butter cookies and butter cookies and, of course, chocolate kiss cookies. I hit my sister up, this morning, to give me her recipe for kiss cookies.

Here it is:

Ingredients:

  • 60 dozen Hershey kisses, unwrapped
  • 2 2/3 cups flour
  • 2 eggs
  • 2 teaspoons baking soda
  • 2/3 cup creamy peanut butter
  • 1 cup butter
  • 1 cup sugar and a bit extra
  • 1 cup brown sugar, packed
  • 2 teaspoons vanilla
  • 1 teaspoon salt

Directions:

Preheat oven to 375 degrees
In an electric mixer mix flour, salt, and baking soda
Add butter and peanut butter and mix on low until smooth
Add sugar and brown sugar and beat on medium until light and fluffy.
Add eggs and vanilla and beat until thoroughly mixed
Make balls about the size of a quarter and roll in sugar
Bake 2 inches apart on ungreased cookie sheet for 8 minutes
Remove from the oven and add press one kiss to the center of each cookie (push them down just a bit)
Return to the oven and bake for 2 more minutes
Remove from the oven and take cookies up with a spatula and place on a rack to cool

Store in an air tight container.

    I don’t do these but I have five I do every year for Christmas and people love them as gifts. I give for the most part to elderly people.
