Crock Pot Potato and Bacon Soup

   Potato & Bacon Soup

This is one of my favorite comfort foods when the weather gets cold. It’s so easy to make in a crock pot and it’s deliciously warming on a nippy autumn day. My husband loves a thermos of it for lunch at work, and I love a cup of it mid-afternoon as a relaxing break. It can also be frozen and re-heated to taste as good as the day you made it.

Ingredients:

  • 6 medium/large potatoes, any kind or you can use 1 large bag of frozen diced hash browns
  • 1 32 ounce box of chicken broth or vegetable broth
  • 1 can of cream of chicken soup
  • 6 strips of bacon, fried crisp and crumbled
  • 1/2 cup of minced onions
  • 1/2 cup sliced carrots
  • 1 small can mushrooms (optional if you like them)
  • 1 teaspoon of Worcestershire sauce
  • 2 teaspoons garlic powder
  • 1 teaspoon Italian seasonings (oregano and basil)
  • 1/4 teaspoon pepper
  • Seasoning salt for garnish

 

Directions:

  1. Fry bacon crisp and set aside
  2. Turn crock pot to low and put potatoes in
  3. Pour in chicken broth and soup and stir until mixed
  4. Crumble up bacon and add, reserving a little bit for garnish
  5. Add onion, mushroom, garlic powder, pepper and seasonings
  6. Cook on low for 6 hours or on medium for 3 hours

 

Serve hot and sprinkle the top with seasoning salt.  Great with warm bread sticks, garlic toast or pretzel crackers.

    If u use potatoes do u precooked them before putting in the crockpot or just dice them and add ?
