Old Fashioned Cream of Tomato Soup



Cream of Tomato Soup

I guess you would call this an old family recipe, but I am not really sure how old it is.  All I know is that this is the recipe my mother used my whole life to make cream of tomato soup.  It is hearty and creamy and it goes perfectly with a grilled cheese sandwich.  It also awesome when left over, not only is it reheatable and delicious as a soup but I have also used the leftovers as tomato gravy with pork chops and mashed potatoes.  I once even used it as a sauce on ramen noodles for a side.  It is very versatile, and a recipe you will want to save for future reference!

Ingredients:

  • 1 quart home canned tomatoes (can also use fresh tomatoes or unsalted store canned)
  • 1 quart milk
  • 1 small onion, diced
  • 1 tablespoon sugar
  • 2 teaspoons salt
  • 1/8 teaspoon black pepper
  • 1/2 cup water
  • 1/4 teaspoon baking soda
  • 1/2 cup flour
  • 1/2 cup real butter

Directions:

In a sauce pan, place tomatoes, sugar, 1 teaspoon salt, onion, black pepper and water and combine

Bring to almost a boil and then lower heat and simmer for 15 minutes

Rub tomatoes through a sieve to cream them and then add soda and stir

(this is how my Mom did it, however, I throw mine into a blender and puree instead of using a sieve)

In a skillet melt the butter and over low heat, then add flour and 1 teaspoon salt, stirring until smooth

Slowly add milk while stirring

When combined, pour white sauce into the simmering tomato mixture and stir

When fully mixed, remove from heat and serve

Other Things You Can Add to This Soup

This soup can be made so many ways, but here are my 5 favorite additions:

  1. Rice and mushrooms
  2. Tortilla strips (crumbled Doritos can also work) green onion and a few tablespoons of salsa
  3. Corn
  4. Tater tots and shredded cheese with a dollop of sour cream
  5. Quinoa and diced green peppers

    The recipe calls for 2 tablespoons salt, but in the directions for 2 tsp. I’m guessing it should be 2 tsp.

    Mmmm! All of the serving suggestions sound so good!

    Tomato soup is a comfort food for me. We usually don’t have enough fresh or home canned tomatoes to make it ourselves economically, but since we’ve been given a huge amount this year I am taking advantage! I’m going to try tweaking this recipe so I can use fresh tomatoes in it 🙂
