  A good dead cow in the form of a steak, or roast cooked for hours with accompanying vegetables are my favorites!
  
  A thanksgiving turkey that cooks for hours served with jellied cranberry sauce and stuffing is a great meal.
  
  As far as the beef goes, it is best if it is raised on grass, hay, and corn. Knowing the animal insures it was well taken care of!

    @lucianna: Oh for Italian meat dishes, my top picks would be anything with nduja, cotechino (but just a few), lardo, pancetta, salame, mortadella..yum!
